“I have only one reason to cook.
I just want all guests to say ‘it’s delicious’”.

There are several old-established Japanese restaurants in Takayama. Among all, we visited Mandai which is renowned especially for its excellent taste.

Passing through the small entrance approach with pine-trees standing elegantly and turning left, we reached to the spacious entrance hall.

Mr. Takeshi Hashimoto wearing white cook clothing welcomed us on the dirt floor with beautiful shades.

“Our restaurant is established around 1930 and quite new compared to other restaurants in Hida. My grandfather opened a stall of oden (a Japanese food of stewed ingredients) or something, and extended it like this. I am the third owner now.” Mr. Hashimoto said.

He showed us the gorgeous building of restaurant, which was built by shrine carpenters, before he started to talk.

Even amateurs can see that the building is not only gorgeous but also particular about the details. The ceiling of the hall is made of some huge boards and transom windows were decorated with elaborate design of trees and flowers.

The windows in the passage facing the courtyard were made by craftsmen using beautiful blown glasses with exquisite distortion.

Mandai has been popular only after three generations.

Mr. Hashimoto has felt that it is natural to take over the family business when he was young.

“I always thought there was no other choice than to be a cook! So I didn’t study at school, haha. Everyone always asks me that I’ve been eating delicious dishes since I was little. But my family was too busy to serve guests and I often cooked my meal by myself.” Mr. Hashimoto said.

After he graduated junior high school, he went on a training to be a chef.

Because his father had a training at Kiccyo in Osaka, he had also been trained at Kiccho in Kyoto for seven years.

Mr. Hashimoto returned home when he was 22 and was in charge of most of the work in Mandai.
